Start by combining all the ingredients in a large mixing bowl. Whip them using a wired whisk or an immersion blender until you get a uniform mixture. Pour the mixture into ramekins and bake them in a water bath in your oven
Preheated to 120C.
Let this bake for 15-20 mins. Remove and place the ramekins on a cooling rack.
Line a large baking sheet with a silicone mat. Heat the water and sugar together in a stainless steel pot on medium heat until the sugar dissolves completely. Remember not to stir.
Once the sugar has melted, turn the heat up and cook until you start to see it turning light golden brown. This should take about 8 minutes. Take this off heat and pour into the silicone sheet and allow it to cool until it hardens.
Crack this into shards using a rolling pin and top them on your baked yogurt ramekins.
