In a large bowl, whisk the heavy cream until it reaches the soft peak consistency. In another bowl, whisk the cream cheese with the sugar until combined.
Combine both the mixtures and add the peppermint extract.
In another container, combine the melted butter and the crushed graham crackers. Layer this in individual dessert glasses and let it set in the refrigerator for a few minutes.
Top this with the cheesecake mixture and allow this to set in the refrigerator for a minimum of 4 hours.
