Chickpea Egg Salad
Subtly flavored, super filling and incredibly healthy, this chickpea egg salad can make for a great make-ahead lunch.

- 1 cup chickpea
- 1 cucumber diced
- 1 jalapeno chopped
- ½ cup cabbage chopped
- 1 onion sliced
- 2-3 cloves garlic grated
- ½ cup orange juice
- 2-4 mint leaves chopped
- 1 hard boiled egg sliced
- 1 orange sectioned
- 1 tablespoon olive oil
- ½ teaspoon chili powder
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon chunky mustard paste
- ¼ teaspoon sumac
In a small bowl, combine all the ingredients for the salad dressing together.
Add all the ingredients for the salad in a large salad bowl.
Pour the dressing on the salad and give it all a good mix.
Let the salad rest for a few minutes and enjoy!
