Instructions
In a shallow bowl, combine the flour, garlic powder, onion powder, ginger powder, paprika, mustard powder, thyme, salt and pepper.
Dip the chicken cubes into the buttermilk.
Coat the chicken pieces thoroughly in the seasoned flour mixture.
Deep fry the chicken until golden brown and cooked through, or bake at 400°F for 20-25 minutes.
Divide the mashed potatoes between serving bowls.
Top each bowl with corn kernels.
Add the crispy chicken pieces over the corn.
Pour warm gravy over the chicken.
Sprinkle with shredded cheese and chopped chives.
Serve immediately while hot.
Notes
Air-fried chicken works great in this recipe.
Use leftover mashed potatoes for a quicker meal.
Sharp cheddar provides the best flavor.
Add hot sauce if you like a little heat.
Store components separately for meal prep.
