Combine the goat cheese with cream cheese and half of the honey in a bowl of a food processor and blend for 5-7 minutes on low speed until smooth.
Transfer the whipped cheese to a serving bowl, ideally a shallow bowl, and garnish with a drizzle of honey, chopped pecans, thyme and salt.
Notes
Make sure to leave it out of the refrigerator for at least half an hour before you serve it. I would also recommend you use a hand whisk to whip the cheese a bit before you plan to serve it. If you’re using your food processor to whip the cheese, you’ll need to keep scraping down the sides to ensure everything is blended well together. If you still have some cheese leftover, you can use it as a topping for your breakfast toast, or even add some of it to your homemade pasta sauce.
