Instructions
Preheat the oven to 450°F (230°C).
Cut the potatoes into cubes, leaving the skin on.
Toss the potatoes with olive oil, minced garlic, cumin, smoked paprika, salt, and pepper.
Spread the potatoes in a single layer on a baking sheet.
Bake for about 30 minutes, or until crispy and cooked through. Alternatively, air fry until golden and crispy.
Meanwhile, heat a little olive oil in a saucepan over medium heat.
Add minced garlic and sauté briefly until fragrant.
Add the spinach and cook for about 1 minute, until wilted.
Assemble the bowl with a layer of crispy potatoes, followed by sautéed spinach.
Add halved hard-boiled eggs and sliced avocado.
Serve with Pico de Gallo on the side.
Season with additional salt and pepper to taste and serve immediately.
Notes
Cut the potatoes into evenly sized cubes for more consistent cooking.
Don't overcrowd the baking sheet or Air Fryer basket if you want crispy potatoes.
The potatoes can be baked or air fried depending on your preference.
Add the avocado and Pico de Gallo just before serving for the freshest flavor and texture.
Customize the bowl with your favorite toppings, sauces, or fresh herbs.
