Instructions
Cure the shrimp in freshly squeezed lime juice for 10-15 minutes.
Meanwhile, slice the cucumber, avocado and onion.
In a blender jar, combine cilantro, garlic and jalapeno and blend into a smooth paste.
Combine the veggies and shrimp in a bowl and pour in the cilantro mixture.
Notes
Use fresh, high-quality shrimp and make sure the shrimp is cleaned and deveined before curing.
Don't let the shrimp sit in the lime juice for much longer than necessary, as the texture can become firm or rubbery.
Keep everything chilled until you're ready to serve.
