This easy side dish comes together in just 15 minutes and has the perfect balance of a delicate coconut flavor, zesty fresh lime, and lots of freshness from the cilantro.
While naan and bread remain my favorites when it comes to mopping up a good Indian curry, I do occasionally turn to rice when I’m in the mood to turn it into a comfort meal.
I recently tried a unique turmeric rice recipe, and it turned out absolutely amazing.
Inspired by its success, I decided to try my hands at another slightly unique take on plain rice, and that’s when this recipe was born.

Ingredients For the Easy Coconut Lime Rice Recipe
Coconut milk: This one’s the hero ingredient really! I would highly recommend using homemade coconut milk for the best results!
Rice: Use a nice long-grain white rice for this recipe. Basmati rice is the best choice, and that’s exactly what I used here!
Ginger: Ginger brings that spicy, earthy flavor to the rice dish. You’ll need just a little.
Brown sugar: To balance the flavors, I added just a teeny bit of brown sugar. You can totally skip this if you want to.
Cilantro: Fresh cilantro brings a lot of brightness to the dish. This one’s a must!
Lime: And of course, some lime zest to brighten up the rice.

How to Make Coconut Lime Rice
Got everything ready? Here’s what you’ll need to do to make the coconut lime rice.
Step 1: Wash Basmati rice at least twice. In a pot over medium heat, combine rice, water, and ginger.
Step 2: Let the rice cook for a few minutes and then add the coconut milk, brown sugar, and salt.
Step 3: Turn the heat down and cook until the rice is done. Stir the rice occasionally.
Step 4: Fluff with a fork, top with lime zest, chopped cilantro, and some toasted coconut flakes.
Substitutions & Variations
- Can’t get your hands on fresh coconut? Switch to good-quality canned coconut milk instead.
- You can use light coconut milk if you want a mild coconut flavor, but I would highly recommend using the full-fat version to bring the best creaminess.
💭Top Tip
Avoid using short grain rice for this recipe. Pick one that is ideally aged, and remember to fluff the rice too!

How to Store the Leftover Rice
Your leftover coconut lime rice can stay fresh in the refrigerator for up to 2 days. I wouldn’t recommend storing it beyond that point, since it can spoil quicker than your regular rice.
To reheat the lime coconut rice, microwave it with a little splash of water.
Tips & Tricks to Nail the Recipe
- If you’re using the canned version, make sure you use full-fat coconut milk instead of the low-fat version.
- Remember to rinse the rice well, ideally until the water runs clear. Doing this helps remove the excess starch, and keeps the rice grains separate when they’re cooked, instead of them getting clumped together.
- If you don’t have fresh ginger, I would recommend skipping it for this recipe. Don’t add ginger powder as it can make the rice look darker.
- To lend the rice dish an extra tangy flavor, use both lime juice and lime zest. Remember to stir in the lime zest towards the end.
- The key to getting the perfect texture of the rice is to have the right liquid to rice ratio.
- Use a heavy-bottomed pot for this dish. This will help keep the rice from sticking to the bottom of the pot.
How to Serve Coconut Lime Rice
I personally love pairing this creamy coconut cilantro lime rice with any good meat-based curry like Bhuna Gosht or Achari Gosht.
This delicate rice dish can also work wonderfully when served with some seafood. I think pairing it with my garlic butter-baked shrimp would be a great idea!
You can also team it up with some grilled meat of your choice. I'm definitely going to be serving it with my chicken malai tikka next!
FAQs
You can! Jasmine rice is actually the next best thing. It has similar long grains, which work perfectly for this recipe.
You can stick to using your regular white rice for this recipe, but I would advise against using brown rice here, simply because it takes a lot longer to cook, and won’t end up looking the best.
Avoid using sticky rice varieties like sushi rice or arborio rice.
You can try making this coconut lime rice in your Instant Pot or rice cooker too. Just remember not to overcook the rice.
