I’ve recently started to make yogurt from scratch, and naturally, I end up with more than I can use.
The result? Lots of different food experiments that use yogurt as the base ingredient. My recent white kadhi and minty cucumber raita have both been big hits, but I really wanted to make something different this time, and here we are!

I love how simple and easy this vegetable raita recipe is.
All you need is a few ingredients and minutes of your time to put this creamy side dish together.
Plus, you can experiment with different mix-ins too!
Ingredients For the Mix Veg Raita Recipe
Yogurt: Start with packaged or homeset yogurt aka curd. This forms the base of the raita.
Vegetables: I used fresh carrot, cucumber, onion, green bell pepper and a tomato. Feel free to add other veggies like beet, red and yellow bell peppers, and even stir-fried okra if you want to.
Spices: I kept the spices simple, and just used some pink salt and a dash of roasted cumin powder aka jeera powder. Sometimes, I also add some crushed black pepper.
Cilantro: To add that freshness to the raita. Sometimes, I like to swap it up and use a pinch of my dried mint leaves.

Substitutions & Variations
- I chose to finely chop the veggies, but you can grate them instead if you want to enjoy a different texture.
- Use Greek yogurt instead of regular yogurt to make the veggie raita thick and creamy.
- To lend it a bit of a crunch factor, add some boondi into the mix. That’s actually exactly what I did when I made my creamy boondi raita.
- You can also add a chopped green chili into the raita mixture if you want that kick of heat.
How to Make Mix Veg Raita
Making the mixed vegetable raita is super easy. First, assemble all the ingredients and get a large bowl ready.
Step 1: Whisk the yogurt and add finely chopped veggies.
Step 2: Season with salt and roasted cumin powder.
Step 3: Mix everything well.
Step 4: Taste and add salt if needed.
💭Top Tip
Refrigerate the raita for 15-20 minutes before you serve it- it tastes even better when it is cold!
How to Store Leftover Raita
I wouldn’t recommend storing your leftover raita for more than a day, as the chopped veggies can start to lose their texture and make the raita watery.
Make sure you keep it refrigerate it in an airtight container, and use it up within 24 hours.
Tips & Tricks to Nail the Recipe
- Experiment with different spice powders like chaat masala or chili powder into the raita to lend it a bit of extra flavor. Sometimes, I like to add my homemade peri peri seasoning when I want it to have a bit of a spicy kick.
- If you’re using homeset yogurt, drain the excess water before you use it for the recipe.
- To make the raita to have a more creamy texture, transfer the yogurt to a muslin cloth and leave it hanging to drain away the whey for about an hour or so. Then, use the thicker semi-solid yogurt for the recipe.
- Start with chilled, refrigerated yogurt for best results.
How to Serve the Raita
This creamy raita made with mixed vegetables is the perfect teammate to any of your favorite biryani, pulao, or any rice dishes for that matter.
It is a staple in my household, and I always make veg raita as a side with my favorite white karahi chicken gravy, and my spicy bullet naan.
And on days when I really want to keep it simple, I serve it with my garlic turmeric rice.

Yes! To make vegan mixed vegetable raita, simply swap the yogurt in the recipe for a plant-based yogurt, and follow the rest of the recipe as is.
You can! Simply prepare the spiced yogurt in an airtight container chop up the veggies and store them in another container in the refrigerator. Then, all you need to do is mix and serve!
