Melt butter in a pan and sauté chopped onion and garlic for a minute.
Add in the seasonings and give it all a quick mix.
Add lemon juice along with a dash of water to get that nice saucy consistency.
Add halved hard boiled eggs and give it a gentle mix. Take off heat and garnish with parsley.
Notes
Turn the heat down when you're adding the seasonings and spices- you don't want them to burn!
I used hard boiled eggs here, but if you love jammy eggs, you can use them too. Simply boil your eggs for 7-7.5 minutes to get that silky yolk, then peel and use them.
Remember to shock the eggs in an ice bath right after you remove them from the pot. This will prevent overcooking and will make it easier for you to peel them too.
To turn this into a nice seafood Cajun egg boil, add a handful of shrimp, crawfish or even some crab legs into the sauce immediately after you add the water.
