What's So Great About the Recipe?
- It comes together super quick, and is a great breakfast option (just like my chili crisp fried eggs), paired with some Ciabatta bread.
- It's finger-licking good. The salty, savory and spicy flavors work so well with the egg- this is one dish that's going to be on your menu for a long time.
Recipe Ingredients

Eggs: The best quality free-range eggs you can find. I hard boiled them here because that's what I prefer, but you can choose to leave them a bit jammy too if you like.
Butter: I used salted butter here, but you can also use unsalted butter if you're trying to control the sodium content.
Onion + garlic: For that savory, umami depth.
Seasonings: To season, I used some onion and garlic powder, Cajun seasoning (or my homemade Creole seasoning), paprika, some red pepper flakes for the heat, my homemade lemon pepper seasoning and a dash of brown sugar to balance the heat.
Lemon juice: For that tangy, citrusy, zing.
Parsley: To garnish. Use fresh or dried parsley- whatever you can find.
See recipe card for quantities.
Substitutions & Variations
- For a deeper flavor, use Air Fryer roasted garlic instead of regular garlic.
- You can also use an infused butter as the base. I like using my jalapeno butter sometimes, but when I have my Cajun butter handy, I almost always use it here!
- I used a splash of water to make the 'sauce' here, but you can also use chicken broth or my low sodium vegetable broth for a deeper flavor.
How to Make Cajun Egg Boil

Step 1: Melt butter in a pan and sauté chopped onion and garlic for a minute.

Step 2: Add in the seasonings and give it all a quick mix.

Step 3: Add lemon juice along with a dash of water to get that nice saucy consistency.

Step 4: Add halved hard boiled eggs and give it a gentle mix. Take off heat and garnish with parsley.
💭Top Tip
Turn the heat down when you're adding the seasonings and spices- you don't want them to burn!

Tips & Tricks to Nail the Recipe
- I used hard boiled eggs here, but if you love jammy eggs, you can use them too. Simply boil your eggs for 7-7.5 minutes to get that silky yolk, then peel and use them.
- Remember to shock the eggs in an ice bath right after you remove them from the pot. This will prevent overcooking and will make it easier for you to peel them too.
- To turn this into a nice seafood Cajun egg boil, add a handful of shrimp, crawfish or even some crab legs into the sauce immediately after you add the water.
- You can use the leftover saucy eggs into your simple green salad to make it more flavorful and protein rich. This is actually inspired by my Egyptian fried boiled egg salad recipe.
How to Serve Cajun Egg Boil
Enjoy this spicy Cajun egg boil on its own or pair it as a side to go with any of your mains. I love serving it with jasmine rice or my lemon dill rice to make it a light lunch. You can also serve it with a crusty bread of your choice- perfect to mop up all that delicious sauce.
And of course, you can also use them as a topping for your bowl of steaming hot Ramen- just like my soy cured egg yolks.

Troubleshooting and FAQs
Store your leftover Cajun egg boil in an airtight container in the refrigerator and it should stay good for 2-3 days.
