In a pot, combine hot honey, salt, butter and baking powder.
Cook for a minute or two on low heat.
Add in the peanuts and mix to coat them all.
Cook for 1-2 minutes and take off heat.
Pour in a single layer onto a baking sheet lined with parchment paper.
Bake at 350 F for 20 minutes or until crispy.
Notes
Use a heavy bottomed pot or pan to make the hot honey-butter mixture. You don't want it to burn!
Make sure you cook the honey mixture on low heat as it can burn super quick.
Remove the baking sheet from the oven a couple of times to stir the peanuts around a bit. This will help them cook evenly and will keep them from burning.
Use a large baking sheet and avoid overcrowding it.
If you're using pre-roasted peanuts, you will need to cut down on the oven time. Keep an eye on the peanuts at the 10-12 minute mark and remove them once they look golden brown.
