In a bowl, combine cauliflower florets, seasonings and oil.
Mix to coat everything well.
Arrange on a lined baking sheet in a single layer.
Bake for 20 minutes at 400 F. Top with lemon juice and cilantro.
Notes
Flip the cauliflower florets over midway during the cooking time to ensure they are nice and golden brown on both sides.
Make sure you chop the cauliflower florets into equal-sized chunks, so that they cook evenly.
Avoid overcrowding the pan with too many of the cauliflower florets. They'll end up steaming and will turn soft instead of getting golden brown, like you want them to.
If you don't have the classic curry powder, you can use a mix of coriander powder, cumin powder, turmeric and some red chili powder to achieve a similar flavor.
