Smoky, savory and full of flavor and texture, this Indian roasted cauliflower is a quick 20 minute side that barely needs any hands-on prep or fancy ingredients.
Pair it with a smoky Tandoori mayo dip and serve as an appetizer, or team it up with some spicy bullet Naan to make it a wholesome meal- it's sure to be a total crowd pleaser either way.

Cauliflower has to be one of the easiest, most versatile veggies to work with, and I almost always turn to using it whenever I need to make a veggie side dish.
My Air Fryer Teriyaki cauliflower and Air Fryer bang bang cauliflower have both received a lot of love, and inspired by that, I also tried making Air Fryer cauliflower steaks with Indian-inspired flavors. And then I thought, what if I could replicate those flavors in a slightly different, bite-sized format, and that's what I did.

Recipe Ingredients

Cauliflower: I used a whole head of cauliflower here, cut into bite-sized florets.
Seasonings: To season, I used a bit of garlic powder and my homemade curry powder.
Lemon juice: Just a little, to drizzle over the roasted cauliflower before serving.
Oil: To coat the cauliflower florets. You can use any cooking oil of your choice- even my lemon infused olive oil if you want a bit of extra citrusy zing.
Cilantro: To garnish.

Substitutions & Variations
- Feel free to experiment with different seasonings and spices. I like using my homemade Thai seasoning sometimes.
- You can also mix in a teaspoon of homemade ginger garlic paste to bump up the flavor of the roasted cauliflower.
How to Make Indian Roasted Cauliflower

Step 1: In a bowl, combine cauliflower florets, seasonings and oil.

Step 2: Mix to coat everything well.

Step 3: Arrange on a lined baking sheet in a single layer.

Step 4: Bake for 20 minutes at 400 F. Top with lemon juice and cilantro.
💭Top Tip
Flip the cauliflower florets over midway during the cooking time to ensure they are nice and golden brown on both sides.

Tips & Tricks to Nail the Recipe
- Make sure you chop the cauliflower florets into equal-sized chunks, so that they cook evenly.
- Avoid overcrowding the pan with too many of the cauliflower florets. They'll end up steaming and will turn soft instead of getting golden brown, like you want them to.
- You can also add a dash of homemade garam masala powder if you like a stronger curry flavor.
- If you don't have the classic curry powder, you can use a mix of coriander powder, cumin powder, turmeric and some red chili powder to achieve a similar flavor. I used them when I made my Baingan Bharta and it turned out perfect.
- Don't forget to squeeze a bit of lemon juice over the top before serving- it really helps round out those flavors. I like to also sprinkle some of my homemade chaat masala.
How to Serve Indian Roasted Cauliflower
You can enjoy the Indian roasted cauliflower as an appetizer or a side to go with your favorite mains. I personally love serving it with my cumin rice, some crispy Masala Papad and a nice glass of mango Lassi or Masala Chaas to make it a filling, wholesome meal.
You can also chop up some potatoes into small chunks and add them in along with the cauliflower florets, like I did when I made my Air Fryer Bhindi Masala, which can pair beautifully with some Indian flatbread, a side of Laccha onions and some cooling rose Lassi.

You can reheat it in the microwave or pop it back in the oven until warm.
Yes, you can! Simply air fry it for 12 minutes, making sure you flip them midway during the cooking time.
