Tajin seasoning

Instructions
Slice hard boiled eggs in half and remove their yolks. Transfer to a glass bowl.
Add grated garlic, salt, pepper, lime juice and chopped cilantro.
Mix well, taste and adjust seasonings if needed.
Add roasted corn and mix again.
Dip the insides of the sliced hard boiled eggs in Tajin seasoning.
Fill up the eggs with the creamy yolk mixture, top with sliced jalapenos, some more corn and chopped cilantro and serve.
Notes
You can prep the deviled eggs ahead of time, but make sure you assemble them right before you plan to serve.
To make the filling smooth, you can pass it through a fine mesh sieve before you use it to fill the eggs.
You can also transfer the filling to a piping bag and pipe it into the eggs- I just like to use a spoon.
