I've recently been experimenting with a lot of Mexican recipes. My watermelon and Tajin salad was such a huge hit at my summer BBQ, and we end up making my Elote casserole every few days at home- that's just how much everyone loves it!
This time, I wanted to try my hands at a Mexican appetizer- something bite-sized and perfect for a party. And what could be better than deviled eggs?

Recipe Ingredients

Hard boiled eggs: These are the star ingredient, so make sure you use the best quality eggs you can find. Organic, free-range eggs are best!
Roasted corn kernels: I used my skillet charred corn here. You can simply roast a whole corn on the cob and then use the kernels. Even better- use some corn Pico de Gallo for that authentic Mexican kick.
Jalapeno: For that spicy kick! You can de-seed them and remove the white insides if you have sensitive taste buds.
Garlic: For that savory flavor. Use air fried roasted garlic for some smoky deliciousness.
Mayonnaise: For that rich, creamy filling. Use the best full fat mayo you can find.
Lime: For that tangy kick. I love using fresh lime juice with a bit of the zest, but you could stick to the bottled variety too.
Seasonings: To season, I just used a bit of salt, pepper and my homemade Tajin seasoning. You can use the store-bought version too.
Cilantro: For that pop of color and freshness.

Substitutions & Variations
- To make things quicker, I like to make a batch of homemade jalapeno mayo and use it as a dip and for this recipe too!
- You can also skip
Tajin and use some taco seasoning if that's what you have at hand- they'll taste just as good. - Sometimes, when I'm in the mood for some extra flavor, I like to drizzle a bit of my jalapeno lime sauce or my favorite Mexican chili oil over the deviled eggs right before serving!
- For a tangy twist, top the deviled eggs with Mexican pickled carrots or Mexican pickled vegetables. Sometimes, I like to use my lime pickled onions too!
How to Make Mexican Deviled Eggs

Step 1: Slice hard boiled eggs in half and remove their yolks. Transfer to a glass bowl.

Step 2: Add grated garlic, salt, pepper, lime juice and chopped cilantro.

Step 3: Mix well, taste and adjust seasonings if needed.

Step 4: Add roasted corn and mix again.

Step 5: Dip the insides of the sliced hard boiled eggs in

Step 6: Fill up the eggs with the creamy yolk mixture, top with sliced jalapenos, some more corn and chopped cilantro and serve.

Tips & Tricks to Nail the Recipe
- I used quite a bit of mayo here, which balanced out the heat from the jalapenos and
Tajin . If you want, you can also top the deviled eggs with some Cotija cheese. - To make the filling smooth, you can pass it through a fine mesh sieve before you use it to fill the eggs.
- You can also transfer the filling to a piping bag and pipe it into the eggs- I just like to use a spoon.
- If you love fresh toppings, whip up a simple cabbage Pico de Gallo, mango Pico de Gallo or cucumber Pico de Gallo, and use it instead. Don't forget to finish up with a sprinkle of some jalapeno salt too!
How to Serve Mexican Deviled Eggs
Serve these Mexican deviled eggs on your snack table along with some crunchy Tajin nuts, juicy Tajin and Chamoy strawberries or my favorite Tajin popcorn.
I also love serving these as a side along with my Mexican mains, and sometimes, also go the extra mile and make some Mexican roasted potatoes or Mexican broccoli to go with it.

Troubleshooting and FAQs
Yes. You can hard boil the eggs and prepare the mayo mixture up to a day in advance. Then, all you need to do is assemble when you're ready to serve.
Store your leftovers in separate containers in the refrigerator for up to a day. If you've already assembled them, it is best to serve them as soon as you can.
To keep that from happening, slice a teeny bit of the egg white from the bottom to help it sit flat on the plate.
