Baby potatoes
washed/scrubbed and halved

any colour cut into bite sized pieces

Instructions
Start by preheating the oven to 400 degrees. Meanwhile, chop the veggies into bite sized pieces, keeping them all roughly the same size.
Combine all the ingredients in a large bowl, making sure every piece of veggie is nicely coated in olive oil and the spices and seasonings.
Portion everything out into 3 parts, and transfer each portion into a 12 x12 sheet of aluminum foil. Fold and seal each ‘packet’ carefully.
Transfer the packets to a baking sheet, seam side up and bake for 30-35 minutes or until the potatoes are completely cooked.
