What's So Great About the Recipe?
I love how customizable these little packets can be. Because everyone can have their own little pack, I get the chance to adjust the seasonings, spices and even add or omit the veggies or other ingredients based on everyone’s taste preferences.
Another major plus is the fact that these foil packs are so fun and effortless to put together- it can be a great meal everyone in the family can get together and enjoy making.
Ingredients
Smoked sausage: I love using smoked sausage for its characteristic flavor. You can stick to using regular sausages or even spiced sausages if you prefer.
Red onion: Both red and white onions bring tons of sweet and savory flavor into these foil packets.
Zucchini: Zucchini is a versatile veggie that works wonderfully with all the other ingredients and veggies in these packets.
Corn on the cob: This lends a nice pop of color, and brings lots of fiber and deliciousness into the dish.
Baby potatoes: Who doesn’t love grilled potatoes? They’ll be nice and soft and have that little char that you’ll love!
Sweet pepper: Bright and juicy peppers are another big essential. They bring in lots of fiber and vitamins, and also make the sausage and potato foil packets look so beautiful when they’re out of the oven.
Garlic: This one’s an absolute must. It lends a nice kick of flavor to the dish and is super healthy too.
Olive oil: Olive oil helps everything come together well. It keeps the ingredients moist when they’re being cooked, and acts as a base for the dish.
Seasonings: I’ve used paprika, onion powder, garlic powder, salt, pepper and Italian seasoning. I love sticking to using this combination- it really works for me and my family and is our all time favorite for any kind of stir fries and grilled meats and other dishes- you’ve got to try it too!

How to Make the Sausage and Potato Foil Packets
Start by preheating the oven to 400 degrees. Meanwhile, chop the veggies into bite sized pieces, keeping them all roughly the same size.
Combine all the ingredients in a large bowl, making sure every piece of veggie is nicely coated in olive oil and the spices and seasonings.
Portion everything out into 3 parts, and transfer each portion into a 12 x12 sheet of aluminum foil. Fold and seal each ‘packet’ carefully.
Transfer the packets to a baking sheet, seam side up and bake for 30-35 minutes or until the potatoes are completely cooked.
Substitutions & Variations
There are tons of variations you can bring to these easy and versatile sausage and potato foil packets.
- To pack in more nutrition, you can add green, yellow and red bell peppers. Green beans, broccoli, mushrooms and baby corn can also be great additions to these foil packets.
- I’ve used a simple and classic mix of Italian seasonings to these dinner packets, but if you want a bit of extra flavor, you can also use some peri peri seasoning or cajun seasoning.
- You can, in fact, also just season the contents of the foil packets with any other condiment or sauce of your choice. I tried making these with my favorite 2 ingredient pesto butter and my homemade teriyaki sauce and they both turned out lip smacking delicious!
- If none of these seem to fit the bill, just stick to a dash of the good old barbeque sauce and some hot sauce (if you really want to).
- Swap the sweet peppers in this recipe for hot peppers or jalapenos if you love a bit of spice and heat.
- If you want to make this dish more rich and delicious, use butter instead of olive oil.
💭Top Tip
To make these sausage and potato foil packets more cheesy and flavorful, you can open up each packet, sprinkle some cheese into it, close it and then broil it for a few extra minutes until the cheese has melted.

How to Store the Leftover Sausage and Potato Foil Packets
If you have any leftovers, you can refrigerate them for up to 4 days and then reheat them whenever needed.
I would recommend transferring them to an airtight container, even if they’re all sealed in the aluminum foil. Doing this will help keep the contents fresh, and you won’t risk spilling out all those juices loaded with the flavor.
Tips & Tricks to Nail the Recipe
- Choose the right kind of sausage while making these dinner packs. Look for a sausage that is flavorful and has a good balance of fat and meat. I love using chicken and turkey sausages, because they pack in so much flavor, and are super easy to work.
- Make sure you use good quality aluminum foil to make these foil packs, and be sure to wrap them tightly, so that all the juices and flavors are sealed in.
- Cut the veggies appropriately- some veggies take longer to cook, while others cook faster. To balance things out, make sure you cut them into the right size. Potatoes can be chopped into smaller cubes, while tender veggies such as carrots can be chopped into larger pieces.
- Adjust and play with the seasonings to your heart’s content. Experiment with different combinations and spices like garlic, thyme, paprika and pepper and see what works best for you.
- You can use practically any kind of potatoes for this recipe. Yukon gold potatoes and sweet potatoes are great choices, but you can go with your instinct and just use what you have.
- I would highly recommend keeping the peel on the potatoes- there’s just something so beautiful about the way the potatoes look when they are cooked with their skin on.
- After the sausage and potato foil packets are done cooking, make sure you allow them to cool down for a bit before you open them up and serve. Trying to open them immediately will cause the steam to hurt your hands.
- Don’t forget to top each opened up foil packet with a sprinkle of chopped cilantro or parsley and some crushed black pepper right before you serve.
How to Serve the Sausage and Potato Foil Packets
On their own
These sausage foil packets actually don’t need any extra effort to serve- that’s really what makes them such a success! You can simply allow them to cool down for a few minutes after they’re out of the oven to allow the flavors to blend into each other, and then serve them as is, on a plate.
With a salad
If you really want to go the extra mile, they can also be teamed up with a salad on the side. Whip up a quick crunchy salad with lots of raw veggies like lettuce, tomatoes, bell peppers, onions and cucumbers, and keep the dressing simple to complement the flavors of the foil packets.
With rice
If you want to make these foil packets more filling, you can serve them with some steamed rice.
With some crusty bread
A side of crusty bread can be another excellent way to serve these hobo dinner packets. The bread can be used to mop up all those delicious juices leftover, and will fill you up too!
FAQs
Yes! You can safely consume food cooked in aluminum foil in the oven. Just make sure the temperature doesn’t exceed 400 degrees. This way, the amount of aluminum that gets leached into your food is very minimal.
If you’re still not sure about cooking the veggies and sausages wrapped up in aluminum foil, you can toss them all in the seasonings and oil in a skillet and cook it in the oven.
Alternatively, you can arrange everything in a sheet pan and cook until they’re all done- which is another great easy dinner idea.
