Grease a tart pan and place a tortilla into it, pressing it from the sides. Pour whisked eggs and cottage cheese into the tortilla.
Add the tomatoes and bell peppers, followed by the seasonings. Mix well.
Add whole or chopped spinach and mix again. Top with a generous sprinkle of cheese.
Finish up with a dash of salt and pepper.
Bake at 400 F for about 20 minutes.
Notes
To save time, you can buy pre-chopped veggies at your next grocery run, and use them instead.
I used a full sized tortilla here, but you could also use small tortillas and a muffin pan to portion it out into individual sized servings. This will also take slightly less time to cook, which is great.
Don't go overboard with the fillings. Remember that the egg mixture will rise a bit as it cooks, and you don't want it to overflow.
