Hearty, filling and incredibly delicious, this tortilla egg bake is everything that a good breakfast should be. Don't be fooled by its looks- it actually takes very little effort and kitchen time to make this.
All you'll need is some eggs, cheese, your choice of veggies and tortillas. Bonus points if you spoon some homemade chili garlic oil over before serving.

For me, breakfast has to be quick and effortless, and still taste great, which is exactly why I keep experimenting with different recipes whenever I can.
My classic egg Bhurji and egg Kheema are on repeat in my household, and my Huevos Rancheros turned out SO good, but I really wanted to try something different this time.

Recipe Ingredients


Tortillas: I used regular tortillas here. You can use whole wheat tortillas or even corn tortillas if you want to.
Eggs: The best quality free-range eggs you can get your hands on.
Cheese: Cottage cheese, for that rich, creamy flavor (and the protein of course), and some Mexican cheese blend to top it off. You can also use a mix of Parmesan and Mozzarella like I did when I made my egg in a bagel.
Veggies: I used a mix of tomatoes, red bell peppers and spinach, because that's what I had at hand. You can try using zucchini, onions and even mushrooms if you want to.
Seasonings: I kept it simple and used red pepper flakes and garlic powder here. You can try using taco seasoning, everything bagel seasoning or my homemade garlic bread seasoning too!
Oil: Any regular cooking oil, to lightly grease the tortilla.

Substitutions & Variations
- To lend this egg bake a nice pizza-like flavor, add some olives into the mix. I tried adding some leftover marinated olives and feta that I had, and it turned out SO good.
- You can also bulk up the tortilla egg bake by adding in some meat. Chopped turkey bacon, crumbled Italian sausage and leftover roasted chicken are all great options.
- I also like to use some Air Fryer roasted garlic instead of garlic powder to bring a nice smoky kick.
How to Make Tortilla Egg Bake

Step 1: Grease a tart pan and place a tortilla into it, pressing it from the sides. Pour whisked eggs and cottage cheese into the tortilla.

Step 2: Add the tomatoes and bell peppers, followed by the seasonings. Mix well.

Step 3: Add whole or chopped spinach and mix again. Top with a generous sprinkle of cheese.

Step 4: Finish up with a dash of salt and pepper.

Step 5: Bake at 400 F for about 20 minutes. Cool for a few minutes before slicing and serving.

Tips & Tricks to Nail the Recipe
- Experiment with different mix-ins to add more flavor and texture to the egg bake. I love using my oven dried tomatoes whenever I've run out of fresh tomatoes, and sneak in some Air Fryer dehydrated bell peppers for a bit of extra color.
- I used a full sized tortilla here, but you could also use small tortillas and a muffin pan to portion it out into individual sized servings. This will also take slightly less time to cook, which is great.
- The seasoned eggs are the perfect base for almost any kind of topping you like. I like to add my meal-prepped Air Fryer shredded chicken or chop up my homemade chicken deli meat and add them in too!
- Don't go overboard with the fillings. Remember that the egg mixture will rise a bit as it cooks, and you don't want it to overflow.
- You can also add some sliced jalapenos for a nice kick- like I did when I made my Migas con Huevo.
How to Serve Tortilla Egg Bake
Enjoy your tortilla egg bake on its own, or team it up with a condiment like spicy tomato jam or basil Gremolata.
If you're serving it for brunch, pair it with a light salad like spicy pineapple cucumber salad or a creamy dip like cottage cheese ranch dip. You can also spice it up and drizzle a bit of fermented jalapeno hot sauce or some Mexican chili oil right before you serve.

Troubleshooting and FAQs
You can store the leftover tortilla egg bake for up to 3 days in the refrigerator, and reheat it in the Air Fryer or oven until nice and warm.
If you don't have a tart pan, you can use any baking dish that is an inch or two deep.
