Peel and cut a watermelon into cubes. De-seed them and freeze them overnight.
Add the frozen watermelon chunks into the blender jar along with the lime juice and honey and blend.
Once it reaches a scoopable consistency, use an ice cream scoop to transfer it to individual serving glasses.
Top with mint leaves, and serve!

Make sure you allow the cubed watermelon to chill in the freezer for at least 6 hours, if not longer. Doing this will ensure that it doesn’t start to melt and turn into a slushy when you blend it.To ensure that the watermelon cubes are completely frozen solid, arrange them in a single layer on a baking sheet, pop them in the freezer, and freeze overnight. If the watermelon has turned into a liquid-like consistency, don’t worry. Simply pour the mixture into popsicle molds and let it set. You’ve got some fruity popsicles ready!
