Baked Yogurt with Caramel Shards

Super rich and creamy, this baked yogurt with caramel shards can be a great dessert to put together for some guests, or even enjoy on your own or with your family.

You'll need just 4 simple ingredients and a few minutes of kitchen time to put it together, and you'll be amazed at how creamy and dreamy it'll turn out.

I don't have much of a sweet tooth, but quite recently, I happened to indulge in a little square of baked yogurt while dining out at a local restaurant. The melt-in-the-mouth deliciousness and the ease of putting this sweet treat together was too much for me to resist, so I absolutely had to try replicating it in the kitchen.

And that's exactly what I did.

What's So Great About the Recipe?

The fact that it just needs a few minutes of kitchen time and a handful of ingredients to put together is what I love the most about this recipe. The baked yogurt is so creamy and versatile, it is sure to be a total hit with everyone.

Plus, I love how it gives me a little bit of an opportunity to experiment and try out different versions and flavors too.

  • Thick yogurt
  • Condensed milk
  • Sugar
  • Vanilla essence

How to Make the Baked Yogurt with Caramel Shards

Start by combining all the ingredients in a large mixing bowl. Whip them using a wired whisk or an immersion blender until you get a uniform mixture.

Pour the mixture into ramekins and bake them in a water bath in your oven preheated to 120C.

Let this bake for 15-20 mins. Remove and place the ramekins on a cooling rack.

Line a large baking sheet with a silicone mat. Heat the water and sugar together in a stainless steel pot on medium heat until the sugar dissolves completely.

Once the sugar has melted, turn the heat up and cook until you start to see it turning light golden brown. This should take about 8 minutes. Take this off heat and pour into the silicone sheet and allow it to cool until it hardens.

Crack this into shards using a rolling pin and top them on your baked yogurt ramekins.

Hint: While melting the sugar for the shards, remember not to stir until the sugar has completely melted. Stirring it at the wrong time will cause the sugar to crystallize, and you won't get that caramelization and uniform mixture you're looking for.

Substitutions

  • Sugar- If you don't want to use sugar, jaggery can be used as a natural sweetener too. Just keep in mind that it'll lend the yogurt a slightly darker color.

Variations

  • Want to bring in a bit of chocolatey goodness? Add some cocoa powder into the mixture.
  • Fancy something fruity and fun? Some berry puree incorporated into the yogurt mixture can really add some extra flavor and nutrition.
  • You can also puree some seasonal fruits like mangoes and pineapples and add a bit of the puree into the yogurt mixture.

There are a lot of other flavor variations you could try out in addition to this classic baked yogurt.

💭Top Tip

For the perfect balance of tanginess and sweetness in this dish, use yogurt that is a day or two old. If you only have fresh yogurt at hand, add some sour cream into the mixture.

If you have some leftovers, you can transfer them to a food safe container and refrigerate them for up to 3 days.

Tips & Tricks to Nail the Recipe

  • To lend some extra creaminess to the baked yogurt, you can also add some heavy cream into the mixture.
  • Love the flavor of cheesecake and want to bring it into this dish? Whip some room temperature cream cheese and add it into the mixture.
  • For a bit of extra flavor, you can also add a dash of vanilla essence to the mixture before you bake it.

Serving Ideas & Suggestions

This creamy baked yogurt, topped with the caramel shards, tastes best when served chilled. You can serve it as a dessert all on its own- no extra effort needed!

I personally loved topping it with my favorite chocolate quinoa crispies (an incredible way to put leftover quinoa to use btw), or some of my pickled figs.

What Else Can I Top the Baked Yogurt With?

If not caramel shards, you can also top the baked yogurt with some fresh berries, chopped fruits, fruit compote or just some Cool Whip.

Why is the Yogurt Still Watery?

To ensure your baked yogurt has the right, firm texture, start off with thick yogurt. Using yogurt that has a higher water content will make the baked version watery, which is not what you want.

Can I Use Greek Yogurt For the Recipe?

You sure can! Remember to use thick, full fat and unflavored Greek yogurt for best results.

How Do I Use Leftover Baked Yogurt?
