Salt and Vinegar Almonds

On the hunt for a salty, tangy and ultra crunchy snack to munch on when you're hit by a mid-day hunger pang? You've got to try this salt and vinegar almonds recipe.

They're delicious, take less than 15 minutes of cooking time (just like my Air Fryer Mexican chickpeas), and are perfect to make in a big batch and store for later too! All you'll need is your trusty Air Fryer and 3 simple ingredients, and you're good to go!

I'm always down for homemade snacks that are easy to make, yet big on flavor. I've tried making spicy roasted cashews and Tajin roasted nuts a while back, and they were both big hits in my household.

This time, I wanted to try something simple, with minimal flavors and spices, and a simple salt and vinegar flavor seemed like a great idea!

What's So Great About the Recipe?

  • Making salt and vinegar almonds is surprisingly easy. All you need is a few minutes of prep and air frying time.
  • They turn out super crunchy and are great to have as a snack any time of the day.
  • You can batch-make them over the weekend and store them for weeks- like my chili lime pepitas.

Recipe Ingredients

Almonds: You'll need about 1 cup of fresh almonds for this recipe. Make sure you choose the best quality almonds, because they really do make a difference.

Salt: Just regular table salt should do the trick. You can also choose to use any other kind of salt like sea salt or an infused salt like jalapeno salt or mixed herb salt to bring a different layer of flavor to these almonds.

Vinegar: I've used just enough vinegar to soak the almonds completely. It should be a little more than half a cup.

See recipe card for quantities.

Substitutions & Variations

  • I've used only almonds for this recipe, but you could also try replicating the same recipe with any other nut of your choice. Cashew nuts, pecans and peanuts are some good choices.
  • I also like to play around with the seasonings and add some Tajin seasoning, lemon pepper seasoning, paprika or cayenne to bring a bit of heat to the roasted nuts.
  • I've used white vinegar for this recipe, but you can also choose to soak the almonds in some apple cider vinegar or even spicy pepper vinegar to bring a bit of additional flavor to the nuts.

How to Make Salt and Vinegar Almonds

Step 1: Soak Almonds in Vinegar: Place the almonds in a glass jar or container and fill it with vinegar, just until the almonds are submerged. Allow this to sit for up to 2 hours.

Step 2: Drain, Dry and Air Fry: Drain the vinegar, dry the almonds and transfer them to a parchment paper lined Air Fryer basket. Sprinkle salt and air fry for 7-8 minutes or until crunchy.

💭Top Tip

Malt vinegar can also be a great alternative to white vinegar, and can lend a delicious and yummy tart taste to the almonds.

Tips & Tricks to Nail the Recipe

  • If you're not a pro at using the Air Fryer, it can be pretty easy to burn your food in there. Keep an eye on the almonds and make sure you remove them once they just start to turn slightly brown.
  • Remember to grease the Air Fryer basket with just a teeny bit of oil that has a high smoking point.
  • If you're making a big batch of these salt and vinegar almonds, resist the urge to dump them all together in the Air Fryer basket- they won't end up crunchy and crispy as you'd want them to be.
  • Make sure you spread the nuts in a single layer in the basket, and toss them midway through the cooking process. I always do this when I make my Sumac spiced nuts and hot honey roasted peanuts too.

How to Serve Salt and Vinegar Almonds

These crunchy and flavorful almonds are perfect to enjoy as a snack on their own, or can be added to any homemade snack mix of your choice. I love adding them to my roasted Tajin nuts and seeds mix.

I also like to roughly chop them up and sprinkle them over my favorite culinary creations that need a bit of a nutrition boost and some crunchy texture. These also turn out fantastic featured on a charcuterie board along with orange candied almonds, crackers and dips.

Troubleshooting & FAQs

Can I make salt and vinegar almonds in the oven?

If you don't have an Air Fryer, you can choose to roast the almonds in the oven. You can roast them in a preheated oven for about 20 minutes at 350 degrees. Remember to line your baking sheet with some parchment paper too!

Can I toast the almonds in a pan?

You definitely can! Just make sure you stick to medium heat, and keep tossing the almonds frequently to make sure they're well roasted on all sides.

How do I store leftover salt and vinegar almonds?

The best way to store your batch of salt and vinegar almonds is to transfer them to food safe airtight containers and store them in a cool, dark place. These can stay fresh for weeks, if not months.

My salt and vinegar almonds are no longer crunchy. What do I do?

If the almonds do end up losing their crunch factor, you can quickly microwave them for a few minutes, let them rest and they'll be crunchy again.
