Featuring my favorite air-fried garlic cloves, this is a total step up over your classic Alfredo or cream sauce.

I recently tried a vegan cashew Alfredo sauce recently, and was amazed at how beautiful the flavors turned out. And that’s when I thought of lending my classic Alfredo sauce a bit of a twist- with some roasted garlic cloves, and created this genius sauce that I’m regretting not trying out earlier.
Just like olive oil pizza sauce, this sauce is incredibly versatile, and is perfect to make in a batch to use throughout the week.

What's So Great About the Recipe?
- The flavor profile of this creamy roasted garlic sauce is insane. The char and slight smokiness of the garlic really complement the classic cream sauce and take it to the next level.
- You can put it to use in a ton of ways- it's really versatile. It can be an excellent pasta or pizza sauce and even doubles up as a dip- like my favorite tomato oil.
Recipe Ingredients

Garlic: Roasted garlic makes everything better, and it is quite literally the hero ingredient here. You’ll need a whole head of garlic for this recipe.
Butter: I used salted butter, but you could totally use unsalted butter if you want to.
All-purpose flour: I used AP flour to make the roux for the sauce.
Milk + cream: To loosen up the sauce and get it to the right consistency.
Cheese: You can use any kind of cheese to add a bit of saltiness and depth of flavor to the sauce. I used shredded cheddar cheese, but you can also use some freshly grated Parmesan cheese if you want to.
Oregano: I used dried oregano, but you could also add any other dried herb of your choice. In fact, I think you could also use some Italian seasoning or my homemade garlic bread seasoning if you want an extra layer of flavor.
Seasonings: I kept the seasonings simple and just used some salt and black pepper. Use homemade herb salt for extra flavor.

Substitutions & Variations
- To make a gluten-free version of this recipe, you can use cornflour instead of the all-purpose flour.
- To make a vegan roasted garlic sauce, you can swap the heavy cream with cashew cream, and use any non-dairy milk of your choice.
- Swap the classic butter in the recipe for some spicy Cajun butter or Pesto butter to bring a bit of extra flavor.
How to Make Roasted Garlic Alfredo Sauce

Step 1: In a saucepan over medium heat, melt the butter and add the roasted garlic along with the flour.

Step 2: Cook for a couple minutes and add the cream, milk, and cheese and continue whisking until the sauce thickens.

Step 3: Once the sauce has thickened, take it off the heat, add the seasonings, and give it a good mix.

Step 4: Use the sauce for your favorite recipes, and top with some extra roasted cloves of garlic.

You can also melt butter, squeeze out the roasted garlic and add it into the mix before you portion it out into individual servings. This way, the base for the sauce is made and ready, and you can try this recipe whenever you want to.

Tips & Tricks to Nail the Recipe
- To add a kick of heat to the Alfredo sauce, you can add some cayenne pepper or paprika- I love using my homemade peri peri seasoning!
- If you don’t have roasted garlic, you can also just quickly pan roast some fresh garlic too. To do this, you’ll need to use fresh garlic, specifically minced garlic.
- You can roast the garlic in advance in a big batch before you use it for this Alfredo recipe. This roasted garlic paste can be stored in little Ziploc bags to be used in perfect sized amounts whenever needed.
- Chopped up sundried or oven dried tomatoes can also be a wonderful addition to the sauce, and can bring lots of fresh, fruity flavors into it.
- To thicken the sauce, you can add some more half and half or heavy whipping cream into the mix.
- Remember to keep stirring the sauce using a whisk to break up any lumps and have a smooth, consistent mixture.
- Season the sauce with an infused salt like garlic parsley salt to lend it some extra deliciousness.
How to Use Roasted Garlic Alfredo Sauce
This roasted garlic Alfredo sauce is surprisingly versatile, and you can serve it in tons of different ways. The best way to use this homemade sauce, in my opinion, is to team it up with your favorite pasta.
You can also team up this indulgent sauce with some roasted broccoli and potatoes or a simple veggie side like potato Aligot. This creamy concoction can also double up as a dipping sauce for your crusty bread! I love using it as the pizza sauce whenever I make cottage cheese pizza bowls.

Troubleshooting & FAQs
You can experiment and use lots of other kinds of cheeses to add some more flavor to the roasted garlic sauce. Cream cheese and mozzarella cheese are two good options.
The best way to store your leftover sauce is to transfer it to an airtight container and refrigerate it for up to a week.
If you want the sauce to last longer, you can freeze it too. Just make sure you use a freezer bag or a freezer safe container to keep away the freezer burn.
If the sauce has turned too thick, add a splash of water or milk into it while reheating it and stir it well.
I would recommend reheating the leftover sauce in the microwave, stirring it at every 20 second interval. You can also reheat it in a saucepan over the stove top if you want to. Just make sure you do it on low heat to keep it from burning.
