Baked Honey Soy Chicken

Pinterest Hidden ImagePinterest Hidden Image

These baked honey soy chicken drumsticks are sweet, salty and spicy, with browned edges and plenty of pan juices for spooning over rice. The marinade takes 5 minutes to mix, then the fridge and oven do the rest.

Just like my Korean Buldak chicken, this one's perfect for a flavor-packed weeknight dinner.

Honey softens the heat from the cayenne and red pepper flakes, while lime, ginger and garlic keep the marinade bright. The chicken starts under foil, then finishes uncovered so the tops can brown.

What's So Great About the Recipe?

  • Sweet heat: Honey rounds out the cayenne and chili flakes, and lime gives the marinade a tangy finish.
  • Quick prep: Everything goes into one marinade. Massage it around the chicken in the bag to coat all sides.
  • Pan juices built in: The drumsticks bake in their marinade, so there’s something flavorful to spoon over the rice- just like in my Teriyaki chicken recipe.

Recipe Ingredients

Ingredients for honey soy chicken

Chicken drumsticks: Choose similar-sized pieces so they cook at about the same rate.

Honey + soy sauce + Worcestershire sauce: Honey balances the salty, savory sauces and helps the chicken brown during the uncovered bake.

Lime juice + garlic + ginger: Lime cuts through the sweetness. Mince the garlic and grate the ginger finely so they spread evenly. I like using homemade ginger garlic paste to make things quicker.

Sesame oil + cooking oil: Sesame oil adds a beautiful nutty note (I used it in my Asian chicken carrot salad too), and neutral cooking oil helps distribute the seasonings.

Red pepper flakes + cayenne + salt and pepper: The flakes and cayenne give this recipe a noticeable kick. Season lightly with salt since the sauces already bring some.

See recipe card for quantities.

Substitutions & Variations

  • For less heat: Reduce the cayenne and chili flakes together so the honey and soy come through more clearly.
  • Swap the citrus: Use lemon juice in place of lime for a slightly different tang.
  • Try chicken thighs: Bone-in thighs work with the same marinade. Use a thermometer to check them and allow more time if they’re larger than the drumsticks.
  • Use a chili oil: For extra heat, add a spoonful of homemade chili garlic oil or chili crunch oil to the marinade.

Marinated drumsticks arranged in a baking dish

Step 3: Preheat the oven to 400°F (200°C). Arrange the drumsticks in one layer in an oven-safe dish and pour the marinade over them.

Browned drumsticks after baking

Step 4: Cover with foil and bake for 30–35 minutes. Remove the foil and bake for about 5 minutes more to brown the tops. Check that the thickest part of each drumstick reaches at least 165°F (74°C) without touching the bone.

💭 Top Tip

Use a baking dish that fits the drumsticks in one layer. They’ll sit in the marinade without overlapping, and the tops can brown evenly once you remove the foil.

Tips & Tricks to Nail the Recipe

  • Mix the marinade well: Whisk until the honey loosens and the seasonings are evenly dispersed.
  • Marinate in the fridge: Set the bag in a shallow dish to catch any drips, then turn it once if the marinade pools at the bottom.
  • Watch the last few minutes: Honey darkens quickly. Start checking once the foil comes off, and use a thermometer to judge doneness.
  • Make it saucy: To get the extra marinade to a nice saucy consistency, add a bit of cornstarch slurry into it during the final 10 minutes of cooking. It's what I did when I made crispy chili chicken too.

How to Serve Baked Honey Soy Chicken

Serve the drumsticks over steamed rice and spoon the fully cooked pan juices over the top. You can also serve the chicken drumsticks with a veggie side like Air Fryer bang bang cauliflower or honey Sriracha Brussels sprouts or even some Teriyaki veggie stir fry.

If you want to keep it light and effortless, try my purple cabbage carrot salad or spicy stir fried edamame.

Insert an instant-read thermometer into the thickest part without touching the bone. Check for at least 165°F (74°C), especially in the largest drumstick.

How do I store and reheat baked honey soy chicken?

Refrigerate the drumsticks and cooked pan juices in an airtight container within 2 hours and use within 3–4 days. Reheat to 165°F (74°C), adding a spoonful of the juices to the dish.
