Pan fry the eggs in a bit of oil until crispy on the bottom. Set them aside.
Add black beans to the same pan and smash them up a bit using a potato masher. Remove and set aside.
Lightly toast the tortillas on both sides to get them to crisp up.
Top with a layer of mashed black beans, a crispy fried egg, a drizzle of hot sauce, crumbled cheese, chopped avocados, sliced jalapenos, Pico de Gallo, a drizzle of lime juice and chopped cilantro.
Notes
Feel free to use any kind of eggs you prefer. Poached eggs and scrambled eggs work well too!
To make Huevos Rancheros even more hearty, you can also use chorizo or Mexican sausage in addition to the eggs and beans.
To make the dish vegan, skip the eggs and cheese, and use soy chorizo for some extra protein.
Sliced peppers and onions can also be a splendid addition to the Huevos Rancheros.
Experiment with toppings, or set up a bar with lots of toppings in different bowls if you're entertaining. Feature sour cream, a simple guacamole or avocado lime crema, some Mexican pickled vegetables and the classic Ranchero sauce.
