This Mexican breakfast, also known as Rancher's eggs, comes together in 20 minutes. It's hearty, satisfying and full of flavors and textures, just like Migas con Huevo.

I've recently been experimenting a lot with Mexican foods. My Elote casserole turned out to be a huge hit and my spicy Chili con Carne received SO much love and appreciation.
Recently, I made some Mexican roasted potatoes that turned out to be so satisfying and perfect to go with my breakfast eggs, and that kind of inspired me to try another Mexican breakfast dish. And here we are!

- It's perfect for a hearty breakfast, but also works wonderfully for a breakfast-for-dinner situation.
- It's customizable! You get to choose your toppings and build the dish the way you want to! I loving using my mango Pico de Gallo for the topping!
Recipe Ingredients

Eggs: Large, room temperature eggs, for even cooking.
Black beans: To make it more hearty. You can use refried beans too.
Pico de Gallo: I used a classic Pico de Gallo here. Feel free to use cucumber Pico de Gallo or corn Pico de Gallo for extra flavor.
Avocado: Chopped avocados, for that creaminess.
Hot sauce: Feel free to use any hot sauce of your choice. I like to use my Chamoy sauce, fermented jalapeno hot sauce or Mexican salsa Macha here sometimes.
Cheese: Cotija cheese works best for this recipe! If you can't find it, use feta or Mexican cheese blend.
Jalapenos + lime: The classic duo that lends Huevos Rancheros that spicy, tangy flavor.
Tortillas: I used regular flour tortillas here. You can use corn tortillas if you want to make the dish gluten free.
Oil: Any regular cooking oil.
Cilantro: To garnish.

Substitutions & Variations
- To make the dish vegan, skip the eggs and cheese, and use soy chorizo for some extra protein.
- For extra heat, sprinkle a bit of Tajin seasoning, right before you serve.
- Sliced peppers and onions can also be a splendid addition to the Huevos Rancheros.
- Add pickled veggies like lime pickled onions, spicy pickled garlic or Mexican pickled carrots to add a bit of tangy crunch.
How to Make Huevos Rancheros

Step 1: Pan fry the eggs in a bit of oil until crispy on the bottom. Set them aside.

Step 2: Add black beans to the same pan and smash them up a bit using a potato masher. Remove and set aside.

Step 3: Lightly toast the tortillas on both sides to get them to crisp up.

Step 4: Top with a layer of mashed black beans, a crispy fried egg, a drizzle of hot sauce, crumbled cheese, chopped avocados, sliced jalapenos, Pico de Gallo, a drizzle of lime juice and chopped cilantro.

Feel free to use any kind of eggs you prefer. Poached eggs and scrambled eggs work well too!

Tips & Tricks to Nail the Recipe
- To make Huevos Rancheros even more hearty, you can also use chorizo or Mexican sausage in addition to the eggs and beans.
- Experiment with toppings, or set up a bar with lots of toppings in different bowls if you're entertaining. Feature sour cream, a simple guacamole or avocado lime crema, some Mexican pickled vegetables and the classic Ranchero sauce.
- I love going the extra mile and using a seasoned salt like citrus salt or jalapeno salt to season the eggs and the black beans.
- You can also add Chipotle in Adobo into the black beans while mashing them to lend them another layer of flavor.
How to Serve Huevos Rancheros
Enjoy Huevos Rancheros on their own, or serve them with a side of Mexican caviar. If you're making these when you're hosting a get-together, pair them with some Tex-Mex roasted potatoes or Mexican deviled eggs.
I personally love serving these with my Texas toothpicks and a nice dip on the side.

Troubleshooting and FAQs
Store the individual elements of Huevos Rancheros separately in the refrigerator. If you've already assembled it, refrigerate it for no longer than a day.
You can prep the ingredients separately (except the eggs) up to a day ahead of time and refrigerate until you're ready to assemble.
