Doner Kebab Bowl

Pinterest Hidden ImagePinterest Hidden Image

This Doner Kebab bowl combines warmly spiced beef with crunchy vegetables, pita chips, Sumac onions, and a drizzle of sauce. It is a colorful dinner with plenty of texture and room for your favorite toppings.

The beef is spread thinly on parchment, rolled up, and baked before being sliced or torn into pieces. With 10 minutes of prep and about 20 minutes in the oven, it is an easy way to bring kebab-style flavors to dinner at home.

Greek yogurt, grated onion, garlic, and pantry spices season the meat throughout. Keep the layer thin and even so it cooks evenly and is easy to break into smaller pieces after baking.

For the toppings, try my Sumac cucumber salad which adds a lovely tang. You can also serve a spoonful of Mediterranean tomato cucumber salad alongside the beef.

What's So Great About the Recipe?

  • Beef cooks in the oven while you prepare the fresh toppings. This is one of the easiest, hands-off dinner recipes you could make.
  • Everyone can assemble their own bowl with the vegetables and sauces they enjoy- just like in my chicken Fajita rice bowl.

Recipe Ingredients

Ground beef: Choose fresh ground beef with a little fat for a juicier result. Very lean beef can dry out more quickly.

Onion + garlic: To add that savory flavor. Use roasted garlic for some smokiness.

Greek yogurt: Use plain, unsweetened yogurt to bring the mixture together and add a little tang.

Seasonings: Ground cumin, paprika, cayenne, garlic granules, onion powder and some salt and pepper. Add a bit of Egyptian Dukkah for a classic Middle Eastern touch.

Dried oregano: To lend the beef a nice herbal, earthy flavor.

See recipe card for quantities.

Substitutions & Variations

  • Use ground lamb, or a mixture of beef and lamb, for a different flavor. Cook ground beef or lamb to 160°F (71°C).
  • Reduce the cayenne for a milder bowl, or add a little hot sauce at the table for extra heat. Try my garlic habanero hot sauce or fermented jalapeno hot sauce- they both pair wonderfully with the Doner Kebab.
  • Swap the pita chips for warm pita bread, or add lemon dill rice for a more substantial base.

How to Make Doner Kebab Bowl

Preheat the oven to 400°F. Prepare a baking sheet and a sheet of oven-safe parchment rated for that temperature.

Step 1: Combine the ground beef, grated onion, minced garlic, Greek yogurt, herbs, spices, oil, salt, and pepper in a large bowl.

Step 2: Mix thoroughly until the seasonings are evenly distributed and the mixture holds together.

Step 3: Lightly grease the parchment and spread the meat over it in a thin, even layer, leaving a little room at the edges.

Step 4: Roll the parchment and meat up gently like a cinnamon roll and place on the baking sheet. Bake for 15–20 minutes, checking that the center of the meat reaches 160°F (71°C).

Let the cooked roll cool slightly, then carefully unroll the parchment. Slice or tear the beef into small pieces and assemble the bowls with pita chips, vegetables, sumac onions, lemon, and a drizzle of sauce.

💭Top Tip

Spread the meat evenly before rolling. Thick patches can take longer to cook, so check the center of the roll with a thermometer rather than relying on the baking time alone.

Tips & Tricks to Nail the Recipe

  • Grate the onion finely and mince the garlic so both are evenly mixed through the beef. For extra flavor, add a spoonful of Turkish red pepper paste along with the other ingredients.
  • Use parchment made for oven use, and keep any loose paper inside the baking sheet and away from heating elements.
  • Avoid pressing the roll into a very tight, thick log. Keep the meat layer thin as you roll.
  • Prepare the vegetables and sauce while the beef bakes so the bowls are ready to assemble.
  • Keep the pita chips separate until serving so they stay crunchy.
  • Add sauce a little at a time; you can always pass more around at the table.

How to Serve Doner Kebab Bowl

Arrange the beef with pita chips, quick pickled red cabbage, cucumber, tomatoes, and onions. Squeeze over fresh lemon and finish with your favorite sauce. I love spooning some of my Turkish salsa over it.

For a fuller meal, add a rice base or serve with warm flatbread. For a tangy and briny flavor, load up the Kebab bowl with Zeytoon Parvardeh or Persian Torshi.

Troubleshooting and FAQs

Is this Doner Kebab made on a rotisserie?

This is a home-oven version using seasoned ground beef rolled in parchment. Baking the thin meat layer gives you pieces that are easy to slice or tear for the bowls.

How do I know the beef is cooked?

Use a food thermometer to check the center of the meat roll. Ground beef should reach 160°F (71°C). Continue baking if it has not reached that temperature.

Why did my Kebab meat turn dry?

Very lean beef, a very thin layer, or cooking longer than needed can dry it out. Spread the layer evenly and check the internal temperature near the end of the suggested baking time.

How do I store leftover Doner Kebab bowls?

Refrigerate the cooked beef promptly in a covered container for up to 3–4 days. Keep the vegetables and sauce separate, and store pita chips in a dry container. Reheat only the beef until steaming hot throughout, then assemble with the cold toppings.

Can I freeze the cooked Kebab meat?

Yes. Cool and portion the cooked beef, then freeze in sealed containers for up to 2 months. Thaw in the refrigerator and reheat thoroughly before adding fresh toppings.

Notes

  • Use ground beef with a little fat for juicy, flavorful kebab meat. Very lean beef can turn dry during baking.
  • Grate the onion finely and mince the garlic so they blend evenly into the meat mixture.
  • Spread the seasoned beef in a thin, even layer on lightly greased, oven-safe parchment paper before rolling it up.
  • Avoid rolling the parchment too tightly, as a thick meat roll may cook unevenly.
  • Bake at 400°F for 15–20 minutes, or until the center of the beef reaches an internal temperature of 160°F (71°C).
  • Let the cooked beef cool slightly before unrolling the parchment and slicing or tearing it into bite-sized pieces.
  • Replace ground beef with ground lamb or a combination of beef and lamb for a different flavor.
  • Reduce the cayenne pepper for a milder version, or serve with your favorite hot sauce for extra heat.
  • Serve with pita chips, sumac onions, cucumbers, tomatoes, shredded cabbage, and a drizzle of your favorite sauce.
