While the aesthetics of these baked avocado egg boats are spot on, my favorite part about this recipe is the fact that it is actually super easy.
You can make these on a weekend for breakfast or even on a weekday when you’re really in the mood to dig into something that’s healthy and fancy-looking.
And of course, the fact that it is packed with healthy fats and low carb is a big plus!
Ingredients For the Avocado Egg Boat Recipe
You’ll need just a few simple ingredients to make the egg stuffed avocado.
Avocado: This one’s obvious, but you’ll ideally need to pick an avocado that’s not too ripe.
Eggs: Medium or large eggs should work just fine.
Seasonings: I kept the seasonings simple and used garlic powder, paprika and some salt and pepper.
Breadcrumbs: I also like to top the avocados with some breadcrumbs.
Oil: You’ll also need a drizzle of oil, ideally extra virgin olive oil to help crisp things up.

How to Make Avocado Egg Boat in Air Fryer
Ready with everything? Here’s what you’ll need to do to make this avocado boats recipe.
Step 1: Preheat your Air Fryer. Slice an avocado in half and remove the pit.
Step 2: Peel the skin if you want to, and from the center, remove a bit of avocado flesh to make room for the egg and toppings.
Step 3: Rub oil over the avocado boat, coat in breadcrumbs and place it in the Air Fryer basket. Crack an egg into the boat and top with your favorite seasonings.
Step 4: Cook for 5-7 minutes, checking at the 5 minute mark to see if the yolk is runny.
Serve hot.
Substitutions & Variations
- If you want to make this dish gluten free, you can skip adding the breadcrumbs or just use gluten-free breadcrumbs as the topping.
- Shredded cheese also makes for an excellent topping to go over the egg boats.
- The Air Fryer avocado boats are customizable too! You can top the egg with some vegan bacon, chopped bell peppers, fresh herbs and practically any seasoning of your choice. I like to sprinkle some homemade Peri Peri seasoning or garlic bread seasoning on the top.

Remember that the mixture should come to a rolling boil- it should keep boiling even when you're stirring it. This will ensure that the peppers cook well, and the jelly reaches the right consistency.

Simply transfer them to an airtight container, and pop them in.
You can then reheat these in a microwave.
Tips & Tricks to Nail the Recipe
- Remember not to pick an avocado that’s perfectly ripe, or it can end up turning brown and mushy when air fried.
- Choose big sized avocados. This will give you enough space to accommodate the eggs and the toppings you want.
- To keep the eggs from spilling out during the cooking process, place a silicone sheet or a baking sheet compatible with your Air Fryer into the basket, and then arrange the avocados in.
- If your avocado halves aren’t sitting straight, carefully slice a bit off the skin from the bottom to create a little flat surface for them.
- Want an extra punch of flavor? Skip the garlic powder and use some smashed Air Fryer roasted garlic instead.
