Recipe Ingredients

Purple sweet potato: Stokes purple sweet potatoes are best to use here! They have a bright purple inside and are rich in antioxidants.
Honey: Just a dash, for sweetness. I like to use my habanero infused hot honey sometimes for that additional kick.
Lime juice: For that citrusy zing.
Seasonings: I kept it simple and used a bit of salt, pepper, red pepper flakes and some of my homemade
Oil: Any regular cooking oil works! Use lemon infused olive oil to amplify the citrusy flavor.
Cilantro: Chopped fresh, to garnish.

Step 1: Preheat the oven to 425 degrees. Halve a sweet potato and score it on the inside. Rub oil all over its surface and season with the seasonings of your choice.

Step 2: Roast for about 40 minutes, remove and check for doneness. Finish up with some freshly squeezed lime juice, a drizzle of honey and chopped cilantro.

Tips & Tricks to Nail the Recipe
- If you want to speed up the cooking, peel and chop the sweet potatoes into cubes, toss them in the honey, seasonings and oil and then roast them. They'll turn nice and crispy too and will cook way quicker.
- For that nice earthy flavor, you can also use some ground cumin to season the potatoes. I did this when I made my Indian roasted sweet potatoes and they turned out SO good.
- If you have small sized potatoes, they may take less time to cook through- around 30-35 minutes.
- You can also cook them whole if you want to! Poke holes in the whole sweet potatoes with a fork and bake until they're tender on the inside, then slice them lengthwise to open them up a bit and top them with your choice of toppings and seasonings like a pat of classic hot honey butter or some Pesto butter or Cajun butter if you're in the mood for something extra.
How to Serve Roasted Purple Sweet Potatoes
Serve these oven roasted purple sweet potatoes with your meaty mains to make a hearty, filling meal. If you're a vegetarian, it can be a great side with any tofu or vegetarian protein of your choice. I love teaming it up with my baked Teriyaki tofu.
Another excellent idea is to top the sweet potato halves with some homemade Italian sausage or shredded chicken, a hot sauce or drizzle of your choice, some shredded cheese and some quick pickled veggies.
