These Air Fryer Mexican baked potatoes have that beautiful golden brown crispy skin on the outside, are soft and fluffy on the inside and get seasoned and topped to perfection with your choice of toppings.
Load them up with some ground beef, oodles of cheese and a nice cucumber Pico de Gallo to make them a meal, or serve them as a side with any of your favorite Mexican mains.

At my last house party, I made some Mexican caviar to go with some tortilla chips, and my favorite spicy Mexican deviled eggs which were a total crowd pleaser.
But what I loved the most were my Mexican roasted potato cubes. They were perfect as a finger food, and I also used my leftovers as a side for my breakfast eggs. And since they turned out SO good, I thought of trying a different spin on Mexican potatoes. And here we are!

- They're SO good. Crispy, soft baked potatoes topped with lots of flavors and textures- what's not to love?
- They're really versatile. You can serve them as a simple side with some Huevos Rancheros or top them up heavily and enjoy them as a main.
- No need to turn on the oven. You'll be using your Air Fryer, which means less mess, less cleanup to do afterwards!
Recipe Ingredients

Potatoes: It's best to use medium or large sized potatoes here. You can use Russet, Yukon Gold or even white potatoes here.
Oil: To help the outside crisp up nicely. I used olive oil here but you can also use an infused oil like lemon infused olive oil or habanero oil for a bit of extra flavor.
Seasonings: I kept it simple and just used a bit of coarse sea salt. Use ground pepper, jalapeno flakes or red pepper flakes if you want to.
Toppings: Use what you like! I used some of my homemade Tajin seasoning, some chopped chives and shredded mozzarella here.

Substitutions & Variations
- Use an infused salt like garlic parsley salt for that subtle garlicky flavor, citrus salt if you love the zing, jalapeno salt or some Sriracha infused salt if you like a kick of heat to season the potatoes.
- For that authentic Mexican flavor and kick, spoon some Chamoy sauce or drizzle a bit of Salsa Macha over the potatoes right before you serve.
- If you prefer a lighter, more subtle topping, try my creamy avocado lime crema or some lemon sour cream sauce.
How to Make Mexican Baked Potatoes

Step 1: Use a fork to poke holes into clean, dry potatoes.

Step 2: Massage the potatoes with oil and sprinkle some salt. Pop them in an Air Fryer preheated at 400 degrees for 40 minutes.

Step 3: Remove and let them cool slightly. Make a + in the middle using a sharp knife.

Step 4: Open up the potato a bit and sprinkle the seasonings and toppings of your choice.

Scoop out the inside of the baked potato, mix it with some cheese and seasonings and spoon it back again inside for a different twist!

Tips & Tricks to Nail the Recipe
- The cooking time will depend on the size of your potatoes. If your potatoes are larger, air fry them for a few extra minutes.
- If you're making these for a crowd, don't overcrowd the basket with too many potatoes. 4-5 potatoes at a time should be just fine, and make sure they're all roughly the same size.
- Use pickled toppings like lime pickled onions, Mexican pickled carrots, pickled green onions or Mexican pickled vegetables for that tangy kick.
- Add the toppings right when you serve. Better yet- set up a toppings bar so everyone can get to pick what they like!
- Fancy some freshness and a bit of texture? Use a salsa like roasted tomato salsa or apricot salsa or try the classic Mexican Pico de Gallo. I love using my avocado Pico de Gallo, pineapple Pico de Gallo and corn Pico de Gallo here.
How to Serve Mexican Baked Potatoes
Load up your crispy Mexican baked potatoes with lots of toppings of your choice. I love topping them with a dollop of my leftover Elote casserole or some roasted corn kernels and my favorite nacho cheese sauce, jalapeno mayo or just some shredded cheese. Don't forget some sliced jalapeno or herbs like cilantro and green onions too.
Sometimes, I also like to top them with my homemade baked beans or doctored up baked beans (depending on what I have at hand), lots of Mexican shredded cheese and a drizzle of my spicy garlic habanero hot sauce.
